Coffee Roasts 101 – What Are You Drinking?

You’re new to the world of coffee and you want to digest as much information as possible in the simplest way to consume. You’ve been drinking your father’s Yuban for years and you just know there has to be something better out there. You want to buy good coffee, but you’re not sure where to start. This guide will serve as your starting point, your beacon of hope in the night.

Let us begin with simple terminology and then we’ll move on to a more refined glossary. There are three ‘main’ categories of roast. There is the Light Coffee Roast, Dark Coffee Roast, and Medium Coffee Roast. To put it simply any coffee you choose is going to fall upon this range of flavor. Each roast is denoted as such by the time spent in the roaster, the temperature it is roasted at, and the color of the bean after the roast.

Coffee Roasting:

This is the process of transforming a green coffee bean into its more noticeable self, the roasted coffee bean. Coffee roasting can last anywhere from 10 to 20 minutes and goes through multiple stages of low to high heats in order to capture the complexities and flavors that are sought in the final production. Coffee has a large spectrum of flavor and color that denotes its characteristics.

Light Coffee Roast:

A light coffee roast is perhaps the least popular of all coffee roasts, but that isn’t to say that it is the least desired coffee or that it is inherently worse than a darker roast. Quite the opposite is true in that a light coffee is more apt to capture the true flavor of a coffee bean. Because its flavors will stay intact a green coffee bean of high quality and desired taste is much more suited to a lighter roast. A lower quality coffee bean will be roasted longer and at higher temperatures to mask its inferior taste.

A light coffee roast will typically have more caffeine than its darker counterpart. As a coffee bean roasts longer the caffeine is ‘burned off’ thus a lighter roast will keep more caffeine intact.

Certain regions and blends are more apt to produce a high quality light roast coffee. Roasters often choose a particular region of green bean coffee to use in their light roast coffee.

How to tell if you’re drinking a Light Coffee Roast?

A light coffee roast is denoted by its light body, full taste, and its bright liveliness. The first impression you will experience is the taste. Because the green coffee bean has been roasted for as little time as possible the true flavors are still in tact. As the coffee is tasted across the palate you will be able to extract the full flavor of the bean. The finishing taste of the light coffee is often described as sweet or lively. A bad light roast will have the acidic taste of grass left on your palate. A good light roast will have a slightly acidic, floral aromatic finish to it often described as citrus or fruity in flavor.

Dark Coffee Roast:

The dark coffee roast is the second most popular of all the coffee roasts, but that isn’t to say that it’s the best roast available. It is often characterized as a dark roast because of the amount of time spent in the roaster

Limit the Number of Milk When Making Bread

When they wanted to buy bread, surely you will choose bread that big fluffy and smooth. You probably would not choose a flat bread because it looks certainly do not draw.

“Bread can be inflated because of the mixture of yeast (yeast) in the dough. Yeast reacts with the air to produce gas,” said Herman Ahmad, baker ASA Food, cooking demonstrations with current bakery Pane del Giorno in PT ASA Food, Sentul, Bogor.

Herman added that the common mistakes made when making bread dough is too much milk.

Many people think that the mixing of milk that much (even replace water with milk) will make more bread so soft and delicious. When in fact, too much milk it will cause the dough can not inflate perfectly. Ideally, the dough will expand 2-3 times its original size.

“The batter can not expand because yeast can not absorb lactose from milk. Consequently maximal yeast can not react with air and cause gas,” he added. In the right amount, yeast could tolerate the presence of lactose, and react to form a gas.

So how does the exact composition of the flour and milk?

Herman advised to use only a third of the milk of the amount of flour used. If using powdered milk, then for one kilogram of flour, milk used is 300 grams. Whereas if you use milk, you can mix water and milk 50:50 according to the size prescribed water.

“But it’s most convenient is to use powdered milk,” he said.

The dancing goats, to high volume commodity sales, to the near extinction of the finest of quality coffee beans, the art of growing and handling coffee berries has never died. It has only been altered though out time.

Coffee! The eye opening elixir. Coffee! Black, drinkable, the energizing drink that livens our lives. Coffee! A long history from an exotic unknown berry to a massive commodity production, back to exotic again. One must hand it to that little coffee shop from Seattle that now encompasses the globe. They sure did take the world by storm. In one fell swoop that little coffee company took a commodity beverage and cast it back into the exotic drinkable realm where it was born from as well as distorting the beauty of specialty gourmet coffee for future generations. What is now perceived as a quality coffee bean has traveled back to the art of commodity coffee. The competition on the street corner for a drinkable cup of coffee has become fierce. Each brewer says that their brew is the “perfect cup of coffee”. However they all grab from the same commodity level stocks. Of course without these commodity grown stocks coffee would be in greatly diminished supplies. Yes, coffee is in diminished supply. That is the supply of good quality coffee beans had almost vanished over the last couple of decades as corner boutiques converted to the ravishing corner coffee shop.

There is a change! Finally there is a change in the air. The very small boutique coffee shop and coffee roaster is finally allowed the glory of finding high quality coffee beans once again. Small farm and niche green coffee beans are now becoming available to the fair trade coffee market. Quality organic coffee is being selectively grown just for the small independent coffee roasting operations.

Finally we have coffee drinkers who care more and more about the people of the Earth and the planet that we live on. We now have coffee drinkers who care about the survival of coffee farmers and the lands on which the coffee bean is grown. There are specialty coffee drinkers who cherish the survival and health of our mother earth.

Sustainable Organic Fair Trade Coffee is finally becoming a household request. Fair trade is good for the people. Organic coffee is healthier for you as well as giving health back to our planet.

Fair trade coffee provides a fair platform for the whole supply chain of this wonderful drink. Fair trade coffee beans mean fair prices for those who drink it. It may not be the cheapest coffee to buy however for the quality and sustainability the prices are equitable. It also provides better wages and living conditions for those who grow and produce the sought after bean. Fair trade is an agreement between farmers, workers, shippers, and consumers to care about each other and everyone involved. After all that is what community and health is all about.

Foresight by coffee growers proved beneficial. The few that saw a future for renewed exotic demand set course with new direction.

Know the terms boiling in Western recipes

MOST you still equate boiling technique between poaching, simmering, and boiling. Indeed, the difference between them just a little. However, for certain dishes are also different techniques used.

Poaching is cooking food by immersing into the liquid just to a boil. You can boil to close it, but remember the temperature inside will rise and simmer pot can easily turn into a boil. Techniques normally used to make the broth simmer served as a sauce on your dish.

Boiling (boil until very boiling)

Boiled food is cooking in the boiling liquid, usually water. Boil water with a temperature of 100 degrees Celsius. No matter how long or how strong boiling bubbles are formed, the temperature will never be hotter, because at this temperature, water is converted into steam.
